Broccoli Salad with Pomegranate | Gizem Beki

I wanted to share this recipe without delay, so that those who have not yet discovered the harmony of broccoli and pomegranate can try before the season is over.

Broccoli becomes even more nutritious, when it is crushed and fermented. So I made a very healthy and incredibly tasty salad filled with antioxidants using that.

  • 500 grams of broccoli flowers and thin parts of the stems
  • 1 lemon juice and finely grated zest
  • 1 large clove of garlic
  • 1 teaspoon of salt

I blended all together in a food processor, until the broccoli is finely grated. then left half an hour for fermentation.

Then added also:

  • 1 cup pomegranate
  • Some more greens (I had kale at home, so added a little bit of it, but you can skip this. Broccoli is will be very delicious on its own, too)
  • 1/2 avocado
  • Big handful of walnuts
  • 3–4 tablespoons balsamic vinegar
  • A little olive oil, just if you want.

I mixed them thoroughly and served immediately.

Absolutely wonderful flavor, a must try!
